I've been trying to eat roughly 2500 calories a day and whenever I've tracked it I seem to have done fine. I'll up it a bit more and make sure I track it and stick to it. Like today I've had 2500 without counting the crappy snacks I had earlier so probably 2700

Bro in your case just stick to calorie dense meals since your underweight. My personal favorite when i start bulking is pasta . Its rich in carbs and has a lot of calories .
Just getting back into keeping in shape after about a year or so out due to injury and I've put on a fair wee bit of weight cancelled my gym membership last year and not sure I want to pick it up again as I really plan on just shifting the weight by running and would rather run in the fresh air. Is that a good idea to just do cardio? Also any song recommendations or things to keep track of the runs? Haven't got an ipod/phone just a crappy phone so can't get apps haha

If you want to lose weight, you need to change your diet. Eat healthy (no sugars, no mcdonalds, etc) and eat less (caloric deficit), also drink a LOT of water. Adding to this, do cardio. You'll lose weight.

Just do what you feel comfortable in doing. 1:2 is always good to start with, Just make sure you can maintain it for 10-20 minutes. It time you'll be 1:1 for 30 minutes
Running while fat is awful for your knees. Do something low impact like an elliptical or an exercise bike until the weight is gone, then move to running.
At the stage now where I'm happy with my size but now need to cut to ideally get down to around 10% body fat. Dieting is just so hard and I hate cardio so much, but it has to be done.
